All the leaves are brown….ย 

Summer is coming to an end! Sad as it may be my favorite time of year is set to grace us very soon!! 
That’s right! ๐Ÿ‚๐Ÿ๐ŸŒฟFALL๐ŸŒฒ๐Ÿ๐Ÿ‚

My absolute favorite time of year, seasons are changing and nights grow longer! I love it! It’s also pumpkin season๐ŸŽƒ๐ŸŽƒ๐ŸŽƒ๐ŸŽƒ๐Ÿ˜†

So in honor of this amazing season debut I made one of our 21 Day Fix recipes that is pumpkin inspired!!

They are called “Pumpkin Pie Energy Bites” from our 21 Day Fix cook book!!

This recipe is Gluten Free, Paleo friendly, vegetarian and vegan!

16 servings 1 serving = 1/2 yellow container! Boom!

You need:

1 cup pitted dates

Warm water 

1/2 cup raw pecans pieces 

1/3 cup canned purรฉe pumpkin

1/4 cup unsweetened coconut flakes, reserve small amount for rolling 

1tsp maple extract

1tsp pure maple syrup

2 tsp pumpkin pie spice

1 pinch sea salt 

To do:

1. Place dates in medium bowl; cover with water. Let soak for 10 minutes. Drain. Set aside.

2. Place pecans in food processor; pulse until finely ground.

3. Add dates, pumpkin, coconut, extract, maple syrup, Punkin pie spice, and salt; pulse until well mixed. Place in a medium bowl. Refrigerate, covered, for 30 minutes.

4. Using clean hands, roll into tablespoon sized balls; role in reserve a coconut if desired.

5. Store, refrigerated, an airtight container.

Happy Fall Ya’ll!

Hi all! Well it has been a little bit but I have been enjoying having my boo home! Tell you that a day is too long with out him but 14! Now that is long, distance definitely made my heart grow fonder ๐Ÿ™Š๐Ÿ˜.

Anyways, now I’m back! And I told you I would be experimenting with all things pumpkin and making healthy yummy goodness! Heck, you will be in heaven when you try this pumpkin chocolate protein pancake recipe!

Well they are loaded with sugar and calories. But I love pancakes! So below is my alternative chocolate pumpkin protein pancakes!!! Try them out and tell me what you think!! The nutritional value is below!

Ingredients:
2 Scoops of Muscle Milk Chocolate Protein Powder
1cup of Pure Pumpkin
2 tsp cinnamon
2tsp pumpkin pie spice
1/2 tsp nutmeg
1 tsp baking powder
4 egg whites
1 cup oats
1cup & 4tbsp water
4 packets of stevia

Directions:
Blend all ingredients
I used an ice cream scope to pour the pancakes on the hot griddle. Serve with your fav sugar free syrup or eat plain! They are amazing!!

The recipe makes 22 small pancakes, the serving size is for 1 pancake ๐Ÿ™‚ and check out their nutritional value!

Summer has come and gone…

happy first day of September!!!

We all know that means pumpkin everything! Stay tuned for some fall recipe swaps ๐Ÿ˜‰

Well to start off I apologize it’s been forever since I have wrote out a few lines but life has in a sense gotten away from me and not in a good way even though these past few days have been awesome since I have been with my fam!

On a progress note! I’m down 6.1 lbs. I haven’t weight in this week but I did take a progress photo for you!!

I’m still a work in progress and I probably always will be. I struggle and I fall, but all of that doesn’t define me. What defines me is how gracefully I rise as I get back up.

People will hurt you, they will break promises, they will change, and they will change again. Don’t let that bring you down. It only makes us stronger.

Enjoy this beautiful first day of September, as summer fades into fall…
