Yes, it’s Christmas time!

Friends! What an amazing last two weeks. First Thanksgiving and now it is Christmas Time! That means hot cocoa by the fire, Christmas Lights and lots of happiness.

So much has happened in the last two weeks, I wanted to give you a tiny life update:

My sister finally moved to Utah!

That is right, we filled an enormous thermos full of coffee and hit the road!

You may have seen all the shenanigans on my Insta-Stories.. Well they continued…  with gym sessions, apartment hunting, shooting at the range and now, we are settling into the Christmas Season, reliving all the childhood things we would do with our parents.

First up, Christmas Lights at Temple Square in Salt Lake City, Utah.

If you are not familiar with Temple Square, this building pictured above is a worldwide icon of The Church of Jesus Christ of Latter-day Saints and the heart of Temple Square.

During Christmas, shortly after Thanksgiving, the square is transformed into a festival of beautiful lights.

Not only do they have beautifully strung lights all down the path ways but there are  handmade paper lanterns with the message “peace” in different languages. So inspiring!

People from all over Utah, and some passing through, come by to experience the magic of the Holiday season here.

It warmed my heart to experience such beauty with my best friend! It also inspired us to relive a family fun activity…. Christmas Cookie Decorating.

We used a standard sugar cookie that was store bought since we were too impatient to actually make them. Thanks Harmons for having a bomb AF Bakery; however, we made the frosting from scratch.

What you need:

  • 2 Sticks of butter, unsalted, room temperature
  • 2 TSP of Vanilla Extract
  • 4 cups of powdered sugar
  • Food coloring (we used red and green but they looked like pastel colors haha)
  • Mixer (stand or hand is fine)
  • Piping bags or Ziplocks work just as good
    • Note if using Ziplocks don’t squeeze like the hulk… if you watched the video you know why.
    • Some recipes call for milk but we don’t use it in this one

Directions:

  1. Cream  butter with a hand mixer or the whisk attachment of a stand mixer until smooth and fluffy. Gradually beat in confectioners’ sugar until fully mixed in, scraping the sides until fully mixed. Beat in vanilla extract.
  2. Add in food coloring and beat until desired color.
  3. Scope into piping bags or Ziplocks
  4. Decorate!

We had some interesting piping skills– as you seen in our video haha but it was so much fun and they tasted even better!

Now you have the goods, go give it a whirl at making your own frosting instead of the processed store bought kind. It makes for more fun and tastier experience! Plus, you can add any sort of extract you want to make fun flavored treats this holiday season.

Fall is proof, change is beautiful

You have probably seen the loads of 10 year comparison photos floating around IG and Facebook so I figured I would participate in the challenge.

A lot has changed in these 10 years. 2009 picture was taken in Las Vegas, a time in my life where free drinks and staying out until 4am was a thing. 2019 picture is a different story, I live in Utah, where life is slow and peaceful and I can be completely content with staying dedicated to my goals. That is 8 hrs of sleep each night, healthy & balanced eating and being strong AF.

Change is good and it can lead to so many opportunities.

Embrace it all. It is beautiful.

Moving into the months of Winter, and next week being Thanksgiving, it means Black Friday is peeking its little face around the corner as well.

That being said, I wanted to share a product I found via Amazon Prime which has changed my life in the hair department and would be an amazing gift for any gal in your family or friend circle. Great for White Elephant Parties too!

This dryer is freaking awesome and is identical to the Dyson one, yet it is only $39.99. Might even get it at a lower price on Cyber Monday, so keep an eye on it!

It has 3 heat speeds and two dryer speeds, plus comes with both attachments. It dries my hair in 5 minutes! Not even joking. (I have short, thin hair, so drying time will vary.)

But it is fantastic and a total steal! Take a look for yourself!

So now that my hair is done and you are out spending $40.00 on an amazing hair dryer (note I am not being paid for this review… literally just want to bring you the best deals at the best price, because why not!)

Okay, it is time to bring you what you really came here for. Food.

Pumpkin Spice Protein Muffins! Just in time for Thanksgiving Brunch.

Ingredients: 

206g Kodiak Cakes, pumpkin flax

70g Apple Sauce, unsweetened

20g Coconut Sugar

86g of chocolate chips, for this recipe I used Espresso Baking Chips 

1 cup Califia Farms Oat Milk

1 Egg

1 6 ct. Muffin Tin

Cooking Spray (I used butter flavored)

*You can use any milk substitute or even regular milk but it will change the macro count, same with the chocolate chips above.

Directions: 

  1. Preheat your oven to 375° & Spray muffin pan with cooking spray
  2. In a large mixing bowl, add Kodiak Cake Mix, Apple Sauce, Coconut Sugar, egg, and sugar. Once a batter consistency, mix in chocolate chips.
  3.  Using a 1/4c measuring cup, scope into each muffin tin, making sure that it is 3/4 filled and equally divided.

Bake @ 375° for 18-22 minutes (checking at 18 mins with a toothpick if they are of consistency.) Your toothpick should come out dry.

Let cool, then Enjoy!

Pumpkin Season… It is coming!

Here is the deal; before you read this with your judgemental self, PUMPKINSPICE SEASON IS ALL YEAR LONG. Okay, judge away!

Everyone knows, I am one Basic AF Bee when it comes to Fall and as soon as July 4th is over, I am in full excitement waiting for Fall to come [insert Will Ferrell Excited Elf Gif]. Everywhere I turn, there are Fall Decorations in stores already! Don’t worry, no fall decor is up yet but… I am now the proud owner of some new Pumpkin Yummyness!

 

Marshalls has all their fall candles in stock and this one smells amazing! The whole house smelt like fall. To top it off, Harmons had some yummy pumpkin salsa and crackers for the perfect afternoon snack!

In true fall fashion, my Instant Pot lunch meal prep will have your house smelling just like Thanksgiving! Check out the recipe below:

Ingredients: 

1-2 lbs boneless skinless chicken breast. I use Butcherbox meats.

Rosemary Garlic seasoning

Fresh Poultry Blend Herbs

Lemon Juice

Instant Pot

Directions: 

Season chicken breast and then put at the bottom of instant pot. I don’t measure the lemon juice, I just pour enough over the chicken in the instant pot so that they are covered and the bottom of the pot is covered. maybe 1/4 cup, depends on your instant pot. Take the poultry herbs and layer around chicken. Set to manual pressure for 30mins and then slow release for 7 mins. Shred chicken and you are ready for some yummy herb, lemon chicken for the week!

Simple, easy and smells like Thanksgiving!

Birthday Cake 😏🎂

Don’t worry it’s healthy!

Because Beachbody would never fail us! 

Look at this:

Birthday Cake Energy Balls

Prep time: 15 mins

Total time: 15 mins

Yield: 16 servings, 1 ball each

Ingredients
1½ scoops Vanilla Shakeology

1¼ cups dry old-fashioned rolled oats

⅓ cup all-natural smooth almond butter

4 Medjool dates, coarsely chopped

¼ cup chopped raw almonds

½ cup mashed banana (about 1 large banana)

½ tsp. pure vanilla extract
Preparation

1. Combine Shakeology, oats, almond butter, and dates in food processor; pulse until dates are incorporated.

2. Add almonds, banana, and extract; pulse until just blended.

3. Roll into sixteen balls, about 1-inch in diameter each.

Avocado… Mess everywhere!

Ever cut an Avocado only to just be wearing it all over your hands?! 
Well the Beachbody blog has you covered! 

Just cut the avocado in two, remove the pit with a spoon, slice the avocado while it’s still in it’s shell, and remove all of the slices at once with a spoon. Or, use a spoon to remove the avocado in one large a piece and then slice.

Pumpkin Spice Overnight Oats!

Serving Size 1 Mason Jar

Serves 5

Ingredients:

2.5 Cups Quick one minute oats (divided amongst 5 Mason Jars) 

1 Cup Plain NF Greek Yogurt (divided amongst 5 Mason Jars) 

2.5 Cup Apple Sauce, Unsweetened (divided amongst 5 Mason Jars) 

5 Tbsp Pumpkin Pie Seasoning- FlavorGod  (divided amongst 5 Mason Jars) 

Divide ingredients equally amongst jars in layers, refrigerate overnight, serve cold or warm in the AM!

Cinnamon on Tap

Today on #TasteyThursday I bring you a yummy tread from the Kodiak Cakes page! 

Cinnamon Roll Microwave Mug Cake
Ingredients:

• ¼ cup Kodiak Cake Protein Power Flapjack mix

• 2 Tbsp. unsweetened vanilla almond milk (or other milk) + 1-2 tablespoons more, as needed

• 1 Tbsp. maple syrup

• ¼ tsp. vanilla extract

• 1 tsp. coconut oil

• 1 Tbsp. brown sugar (or coconut sugar)

• ¼ tsp. ground cinnamon
Instructions:

1. Spray a microwavable mug with cooking spray and then mix together Kodiak Cake mix, milk, maple syrup, vanilla and coconut oil inside. Add 1-2 tablespoons more milk, if needed for desired consistency. You want the batter to stay thick, but not dry.

2. In a small bowl, whisk together brown sugar and cinnamon and sprinkle over the top of the mixture in mug. Use the tip of a knife to swirl cinnamon mix into the top of the batter.

3. Microwave on high for about 1 minute and 25 seconds. Take out of the microwave and if desired transfer muffin to a plate. Enjoy!
