2021… I thought you were the year

2021… I thought you were the year… but maybe you still are?

The last you heard from me I was 32 years old and while we were all in the mist of a pandemic, I still managed to turn 33. Pretty soon I will have been right back where I left ya but another year older… I could not let a whole year go by without getting the blog back.

A lot has happened in 2021. The clock struck midnight and 2020 was in the past… well we all thought it would be. I managed to go a whole year without getting Covid 19… that is until 2021 hit. 2021, you were supposed to be my comeback year, what the hell happened???

That is right. I got COVID.

Here is the thing. I never thought I would die from Covid, that was never a fear of mine, even though I am considered at “risk” but it still scared the living shit out of me. So when I got it, I was living my worst nightmare. Well, literally, it was the worst pain I had felt in ages.

How it started:

I went to Costco and Smiths on Sunday morning, grocery shopped and went straight home. The following day, I worked remotely and then hit a hard workout. Tuesday rolled around and I felt so sore. Like DOMS sore. I thought, “damn that was a good workout, but F I am so sore.” I worked remotely again. Wednesday hit, and I could barely move. I felt like I had the flu, and DOMS combined and so I took the day to rest, I slept a lot and the next morning was 1000x worse. First thought, “no f’ing way I have Covid, there is no f’ing way”

Off to the COVID testing line I went. Thursday, I can barely walk up stairs, I am coughing my lungs out and now having difficulty breathing. No results yet. Thank god my sister is an MA, she was able to bring by some goods. Porch drop of course. Friday morning, confirmed… you have the RONA. Yay me. Quarantine 2 more weeks. My symptoms were the worst the first 4-5 days, by the time that Saturday rolled around, I was feeling more like myself. 2 weeks in quarantine and symptom finally free… or so I thought.

2 months later:

Working out, still hard to do, breathless walking up stairs, have a handy inhaler now.

3 months later:

Makes lunch… Sausage, broccoli and rice… the norm. Same thing I ate the day before… what is that smell? What is that taste? Is my lunch bad?

3 months 1 week later:

Walks into Starbucks… what is that rancid smell?? Gross my latte tastes sour.. What and the actual f is happening. I will tell you what is happening. Parosmia, “a change in the normal perception of odors, such as when the smell of something familiar is distorted, or when something that normally smells pleasant now smells foul.”

Literally, FML.

How it is going:

So yeah, 3 months later, I did not “lose” my taste and smell like most, I had Parosmia, fully distorted taste and smell. Everything I ate was rancid tasting, chemical tasting or like wet dog. It is hard to explain. But it made me want to die. Literally. Months went on and nothing seemed to make it better until I saw a kick ass ENT who was able to bring a little light to this dark ass tunnel.

Where I am at:

Covid hit me hard. I survived but I am still experiencing the effects of this shit hole of an illness. My ENT was able to place me on a round of steroids, and found some research that was being done in the UK about smell training to help my senses and heal my olfactory. We are all just wandering around here in the dark as we continue to navigate covid though so if you have experienced prolonged distorted taste and smell due to covid, email me. I would love to swap experiences.

How is my taste and smell now you ask? I would say 40% back. I do smell training twice a day and I really think my taste and smell has improved. It has been 8 months since these symptoms appeared and it has been 10 months since I had gotten Covid. I have recently been able to incorporate foods that once tasted disgusting back into my everyday diet. Hot coffee still smells like wet dog but Iced Coffee is great again, thank the lord. I tried carne asada for the first time a few days ago and it had a slight funk aftertaste but it tasted for the most part, normal.

My Covid experience flared up my anxiety, messed with my mental health and killed my foodie vibe so I have not been writing. I was not really sure how to navigate life, let alone a blog. So thanks for sticking around.

Excited to get back to me again.

Promise I will not be gone for that long again.

Trader Joe finds Holiday edition!

I am a sucker for Trader Joe’s and if you do not have a store near you, I apologize in advance because their treats are my favorite.

In highschool, I used to work at a Trader Joe’s in the Bay Area and that is where my love for food began but also where I increased my international awareness of some amazing and unique cooking techniques. If you do not know what a Trader Joe’s is, hop on over to their website to discover their story and snag some awesome recipes in the process!

Today I want to share some of my favorite holiday finds from TJ’s that you need to get your hands on before they are gone for the season!

First up, Candy Cane Green Tea! The perfect treat for an evening of Christmas movies and cuddles! I love how refreshing it is and it is decaf so you can have it any time of day without worrying about being kept up too late!

A must have in your pantry all Fall long is TJ’s Fall harvest Salsa. Dip with your sweet potato tortilla chips (also at TJs), use it on Turkey burrito bowls, or top on your favorite white fish! It is hearty and has a unique pumpkin taste that is to die for.

Next up, a snack plate that is so necessary for a Friday night in quarantine! Grab your favorite bottle of wine and cozy up with your boo thang cause this plate is lit. I used TJs basic salami and prosciutto pack and added my favorite seasonal cheeses and cotton candy grapes which are so sweet and yummy!

Their Beehive cheese is bourbon infused, light and pairs nice with the hot salami. Two Toscano cheeses for your taste buds, one creamy and soaked with wine and the other dusted in cinnamon. Both pair perfectly with the prosciutto and salami!

If you are looking for something light for lunch or dinner during the cold winter months.

Look no longer!

Pumpkin bisque! All the fall spices wrapped up in an amazing warm treat. It is like a hug in the dead of winter! I like to pair it with a grilled cheese sando but you do you!

Now these 3 things that Trader Joe’s carries during the holidays are probably my all time favorites. One is a new item, not necessarily seasonal, at least I hope. And two are seasonal so grab them before they go!

Instant Cold Brew Coffee anyone? I love making this in the afternoon when I need a pick me up. I mix 1 TBSP with ice cold water and top with peppermint cold foam! It pairs amazing with the Peppermint Joe Joe’s which are, in my opinion, better than oreos hands down!

Last but not least… Ginger people!! First off, I love the spin from Gingerbread Men to Ginger people, yay TJs! Second, they are so yummy. I love to make my protein shakes and puddings into treats so sometimes I add 2 ginger people to my FNX chocolate protein shake and blend them together in my Ninja. I am telling you… healthy never tasted so good!

These are just some of the amazing things that I wanted to showcase for you this week, so if you are near a Trader Joe’s head to your location before 1. lockdown happens again or 2. the holiday season is over and your favorites are gone until next year!

We all know how much your girl loves to eat, bake and cook so next week we will have some holiday treats and new places we are trying out this weekend!

Where did Fall go?

I closed my eyes for what seemed like 5 seconds and I opened them to a winter wonderland! Though Fall left quickly, we still managed to sneak in a few activities before the snow fell.

I mentioned in the last post that Fall was about being able to appreciate letting go of things, allowing the change to happen organically.

I had the amazing opportunity to capture the most beautiful version of two people letting go of the past that bound them, held them back and yet, still allowed them to meet and recover in a unity that no one can explain. The representation of what is the death of a soul, is reborn by the picturesque scenery of Fall.

Again, allowing you to let go.

I couldn’t be more proud of these two amazing souls.

Having the strength to let go and find comfort in friendship.

We celebrated that night with some halloween fun!

We made the yummiest Caramel Apple Mimosas and had our first Trick O Treaters in the new house. We wore masks when handing out candy of course. The new norm now.

The next few days, it got colder and snow was in the forecast so before we closed out fall for good, I put my baking skills in motion to whip up one more pumpkin filled treat!

Get ready for some yummy Pumpkin Protein Muffins!

Don’t worry, you can enjoy these all year long!

Ingredients:

  • 1 Cup Pumpkin Flax Kodiak baking mix
  • 1 egg and 1 egg white
  • 1 cup vanilla almond milk
  • 3 tbsp swerve or sugar substitute
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie extract
  • 1 tsp cinnamon
  • 1 & 1/2 bananas (I let mine brown in fridge for extra sweetness)

Directions:

  1. Preheat oven to 375 degrees
  2. Prep muffin tin (12 count)
  3. Mix all ingredients together in a bowl until batter consistency
  4. Pour into lined muffin tin or sprayed tin
  5. Bake 18-22 mins depending on type of oven

This makes your house smell yummy!!

They taste to die for too! Where are my pumpkin lovers at?

Even though we are entering into Winter, I will still be keeping lots of pumpkin in my pantry for amazing treats like pumpkin pies! Speaking of Pie… next up on the blog, we have a brand new pie store in South Jordan that I am dying to share with you, and we take a trip to Provo and visit the Trader Joe’s for our monthly stock up. Stick around for new eats and my favorite treats from TJ’s!

Adventure Awaits · Healthy eats!

Pumpkin Patches, Haunts and a fall recipe for snowy days!

Utah: land of 70 degree weather one week and 16 degrees and snowy the next.

We had so much fun at the Kuwahara Pumpkin patch this past weekend in Draper!

They have the best pumpkin selection and the cutest pumpkin wall back drop!

We even got some cute mini pumpkins and decorated them, it was so much fun! We got the design ideas from a Starbucks we stopped at.


Later that night, we went to what in my opinion, has been the scariest haunt so far!

Check out the Haunted Forest!

Between the weather and darkness it was by far the scariest. They have amazing themes and props— with some twists that made my stomach drop a bit! Don’t worry, we survived though!

Since we went on a Saturday, and did not get a fast pass, the wait was about 45mins but felt fast, minus the cold! It is about a mile or more long so wear comfortable walking shoes that you don’t care about because it’s dusty and well it’s in the forest.


The fall season has quickly turned into winter though, Sunday brought snow and 16 degree days so in true fall fashion, I made my famous pumpkin 🎃 chili !

Ingredients:

  • 15oz pumpkin
  • 1cup low sodium chicken broth
  • 1lb ground turkey
  • 3 Rona tomatoes
  • 2 medium sweet potato
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 can low sodium pinto beans
  • Chili powder
  • Garlic powder
  • Smoked paprika
  • Salt
  • Pepper

Directions;

  1. In an instant pot, spray with olive oil to avoid sticking. Set instant pot on sauté and cook turkey until almost done (don’t over cook)
  2. While turkey is cooking, chop peppers, sweet potato and prep other ingredients
  3. Once turkey is cooked, turn off instant pot and all the remaining ingredients, save spices for last and measure with your heart.
  4. Give it a good stir and put the lid on.
  5. Switch the instant pot into manual or pressure cooker mode. Set for 45 mins and forget it!
  6. Once time is up, slow release for 7 mins
  7. Enjoy!

I have been eating my pumpkin chili all week for prep, it also freezes well! Perfect fall meal for those 20 below days.

Autumn 🍂 The season that teaches us that change can be beautiful 🍁

Today on the blog: A SweetGreens copy cat recipe, my favorite fall playlist and why I am ditching counting calories this fall.

I start you with my go to fall playlist: Morning Coffee ☕️ Vibes

This play list is one I have been curating for years and it is perfect for crisp mornings! Give it a listen and a follow via Spotify!


As the air gets crisper, so does my love for autumn recipes! One thing I miss the most about living in San Mateo was my lunch dates to SweetGreens! They have this Warm Harvest Bowl that is to die for. There are no SweetGreens in UT so I had to make my own, it was amazing!

Ingredients:

  • 3oz Chicken
  • 2oz Wild rice
  • 1oz Goat cheese
  • 1/2 Apple
  • 2oz Sweet potato
  • 4cups arugula/kale mix
  • .5oz walnuts
  • 2tbsp dressing (I used Trader Joe’s Vegan Cesar)

Directions:

  1. Roast sweet potatoes, I prepped these yesterday on a sheet pan in the oven for 25mins at 425
  2. Cook chicken (I used rotisserie chicken)
  3. Cook rice according to package
  4. Combine all ingredients and enjoy!

Now, I did measure out the ingredients for today’s bowl however, I’m not tracking macros.


For those who have followed me for a while know that I struggle with eating disorders, body dysmorphia and over exercising. For those that are new to this page, it is more common today, than you think, leave judgement at the door.

Anyways— I broke up with calorie and macro counting this week (and the remaining year) to focus on healing the above mentioned things. You see, when your body has been in a deficit for so long, yo-yo dieting and excessive exercising your hormones become out of whack, you stop or even gain weight and everything begins to stop working right. My goal in resetting is to fix this.

The plan:

  • Focus on self care with intuitive eating, mindfulness practice and self love
  • Eliminate restrictive mindsets while consuming, whole, nutrient rich foods
  • Adding in vitamins and minerals to help support and balances hormones
  • Movement for pleasure, fuel and not for the punishment of eating

I don’t foresee me going back to my restrictive ways but it’s not going to be easy in this healing process. Leaning on meditation and close friends will be my crutch.

I have been listening to an amazing podcast that’s been absolutely helpful in this transition: Sarah Grace MS, RD give it a listen, she will be an amazing resource.


So like the leaves change in fall, so do we as humans. I’ll leave you with this; the size of your waist has nothing to do with your worth.

I can’t be the only one who sees you

“I know you’re obsessed with me”- PSL

Guys! It’s officially pumpkin season. That means, weekly pumpkin recipes and where to go in Utah to have the most Halloween fun! But first . . . coffee!

Not any old coffee, an at home take on your favorite coffee chain’s

Ingredients:

Pumpkin Cream Cold Brew

Ingredients:

  • 12 oz Iced cold brew or black coffee
  • 1 pump Sugar free pumpkin syrup
  • 1 pump Sugar free vanilla
  • 2 Tsp Pumpkin puree
  • 3oz heavy cream
  • Pumpkin pie spice
  • Hand frother

Directions:

  1. Add ice to favorite cup, put coffee over ice
  2. Add 1 pump of Sugar Free Pumpkin syrup. Stir.
  3. In a separate small glass, add heavy cream, pumpkin and vanilla syrup. Froth with hand frother until foam/creamy
  4. pour cream foam over iced coffee; top with pumpkin pie spice
  5. Drink up!

Now that you have your coffee, let’s chat about 2 super fun night activities you can do this Halloween season with the fam! Kid friendly, Utah local! First up . . . . . Salt Lake City’s DreamScapes

Dreamscapes is Utah’s first environmentally sustainable immersive art attraction! They have over 100 local artist helping keep Utah’s art scene alive!

It’s a hands on exhibit, allowing you to really immerse yourself in each artist creation. From giant octopus sculptures. . . .

. . . . To meditation rooms with lights reflecting your presence

We purchased tickets in advance, you must wear a mask the entire time and are temperature checked at the door. Super easy and though weird with masks, still a great time! What a time to be alive!


Saturday Night Scares Anyone?

When it comes to all things spooky, Utah does it pretty good! Last year was my first haunt here and it did not disappoint. From that moment, I fell in love with Spooky Halloween all over again.

Haunted Houses are my jam. . . . Even if they give me heart palpations and anxiety attacks. Count me in every time.

First visit of the month: Fear Factory SLC I give it a solid 4:

Why I loved it:

  • It was not a constant scream fest for me. There was a good amount of time I was able to look around and admire the work that went into making it
  • When it was scary it was scary. I felt immersed in the scene and at times struggled to see, understand who was human and who wasn’t and I loved every minute
  • They were strict on 6ft distance, wearing masks and had sanitizer stations
  • The end was dope AF! It scared the lights out of me… I can’t say more. Just go see it for your self!

What I didn’t like:

  • I wasn’t a huge fan of the drapes that hung down in entry ways. I was grossed out by everyone touching them. (Thanks Covid for making me a germ phobe)
  • There was 2 staff that were just rude. It doesn’t take much to be kind, it’s just a haunt, remember that. (Sign your waivers or they will get mad 🤪)

Over all: would recommend. They have a strict 6ft rule for distance but the characters don’t follow it… they make you wear a mask and sanitize before going in but do not check your purses or bags. If that is a deal breaker, might not be right to visit but I feel you should! It’s worth the waiting in line and listening to weird magic jokes.

Is it chaos or is it fate?

2020 seems like it has been absolute chaos… but is it? Or is it just fate?

This year started out normal and like you probably experienced, had quickly snowballed into chaos. I haven’t been writing, I lost my faith in the universe, I lost my way in life. I turned to alcohol and other bad habits until one day I woke up feeling reborn.

In April two things happened, I was let go from a job due to Covid that I love and I met the love of my life. They say when you let go of one thing, you open the door for others.

Love is patient

The door for the rest of my life opened and though, not perfect, it sure seems that way because of this man.

The months went on, I started to embrace things that led me back to the universe.

We explored more.

We fell in love

We let go of fear

We celebrated life together

We became a family

We didn’t let anything hold us back

We found our faith in the universe again

When you realign with the universe, the possibilities are endless.

I’m so excited to share this new adventure with you. It feels good to be back. 💚

Moving On

Moving on doesn’t mean you have to forget about the good things. It just means that you have to accept what has happened and just let go.

It has been a while since I have put thought to the keyboard and for good reasons, the past two months have been a series of roller coasters and it ended with me losing my job due to COVID-19. I know there are millions whom are in the same situation as me and are feeling so many emotions. It is a grieving process that I have never known and trust me when I say, I am here for you if you are struggling. I know that having a support system is key during this time. I will be that for you, we can be that for each other.

November 2016:

I took a leap of faith when I joined LendingClub in 2016, leaving an amazing company where I had tons of friends. The three years I spent with LendingClub were some of the most exciting years of my career.

Not only did I have the opportunity to build their entier University Recruiting Program, which included an Internship that brought in a total of 42 interns over the course of 2 years but I uprooted my life in 2019 and moved to the amazing state of Utah, to help build out the Lehi office. Some of the most amazing memories were made with these friends who quickly became family.

Although this chapter of my story has closed, I am blessed to have met each and every one of these amazing humans. The bond we share is unbreakable.

I am looking forward to seeing the doors that open this year and I am excited to announce the revamp of Team Fearless Fitness.

We have added Nutrition Coaching to our offerings and are excited to be taking clients virtually and in the local Salt Lake /Utah County area. Please send me an email if you are interested in learning how to stay on track with health, fitness and mindset during this crazy time.

Thank you LendingClub for an amazing 3.5 years. Now, it is time to bravely move forward into the new path of this journey we call life.

Healthy Chicken & Waffles & a snack for your Super Bowl Sunday!

Guys! It has been a while since we did a healthy recipe swap.

I have been craving Chicken & Waffles; missing the ATL like crazy. So in true Fitness Fashion, we came up with a recipe swap to make these a treat you can eat all week if you wanted!

Ingredients:

  • 34g Gluten Free Flour
  • 28g Quest Nutrition Protein Powder, Vanilla
  • 1 TSP Baking Soda
  • 1 TSP Baking Powder
  • 2 Lg Eggs
  • 8 oz Chicken (Air Fried, Rotisserie, baked you pick!)
  • 4 oz Unsweetened Almond milk

Directions:

  • Mix dry ingredients together, add wet
  • Mix until cake batter consistency
  • Heat waffle iron and spray with cooking spray
  • Once all the waffles have been made, construct your plate how you like! See the Youtube video for reference. Enjoy!

Now, if you are watching the Super Bowl, you probably are surrounded by snacks from all over, containing endless amounts high calories. Normally I would be right there with ya indulging… but I do not have cable and I am trying to get my life together in terms of eating habits, so I am snacking on something that not only fits my macros but tastes like PIZZA!

To be honest, when I first got these to try, I was skeptical because you always have those substitutes that are supposed to taste like foods such as pizza… and they taste like cardboard or just weird AF. But these, these my friends, are 100% amazing!

Adventures in Utah

Hey friends!

If you haven’t heard, I have been MIA for a few weeks because I adulted so hard and bought my first house!

So things have been chaos but they have finally settled down and I am all settled in. Just in time for my little sister gang to reunite!

My best friend flew in from Portland and my sister lives in Utah now so we reunited and it felt so gooooood. Imagine me singing that to you… 

We have been exploring all over Utah. Coffee shops to Whiskey Bars to Ice Castles, you name it, we were trying it.

The three of us together is beyond outta control and I love it! I missed us so much.

Wanted to share all the amazing places we explored so the next time anyone visits Utah, you can have just as much fun as we did.

First stop, coffee: 

Right before Mon got here, we found this cute AF Coffee Shop in Sandy, UT.

Meet The Bean Yard Coffee House

I had an Oat Milk Latte and Lo enjoyed a Sugar Free Vanilla Oat Milk Latte. They were delicious!  Made so perfectly!

The vibe and atmosphere was charming and had this Portland vibe. Good music playing, lots of open space to sit and enjoy your drink or work remote!

Will definitely be coming back to try more coffee and their treats which looked AMAZING!

Next Stop: DOUGHNUTS

Doughnuts are one of my all time favorite carbs! I love me a good Doughnut and so we tried the North Carolina Famous, Duck Doughnuts.

Now this is not your average Doughnut Shop. This place has these amazing flavors to choose from such as: Maple Bacon and Blueberry Pancake (which were my favorite may I add).

Here is the kicker, they are MADE TO ORDER! So you never have to worry about them running out and they are warm and gooey when you receive them! I am making myself crave these as I write this!

They also had this amazing Winter Blend coffee which had end notes of Whiskey. It was bomb! They have locations all over, primarily the South East but if you are in Utah, we just got our very first location in South Jordan, UT! So if you are local or visiting, head over cause you do not want to miss this.

We are fueled so now it was time for the long drive over to Midway, UT.

Home of the Ice Castles!

I will start by saying it was absolutely freezing. I recommend wearing warm boots and pants that are thicker than leggings. My peacoat was fine but it was snowing so not the smartest choice. Looked cute AF though!

Once we got in, I was taken away at how intricate every detail of these sculptures were. These photos do not do it any justice. 

The colors were showing through, blue mesmerizing Ice Castles. All in which you could walk through or slide down. I tried to crawl into some but it was too cold to be laying all over ice. I did have the courage to sit on this thrown… leaving my bum super icey, haha. You sit on a throne of Ice… Ice Queen? Sounds about right… haha.

If you bring your kids, they can take small plastic sleds down the slides. It was super cute to watch. There are so many photo opportunities too, and while the blue holds a pretty background, nothing compares to what this place is at night.

So if you do get tickets for this majestic venue, I highly recommend going at dark. It was so breathtaking to see, it cause none other than an Ice Cream craving! So off to Salt Lake City we went!

By way of recommendation, I finally tried this place. I introduce you to: NORMAL

They have a storefront which offers a ton of variety but we decided to take a gander at their truck this weekend.

Their truck had four flavors to choose from and a handful of toppings. I went with Matcha Ice Cream sprinkled with Fruity Pebbles. Let me tell you… I found my new favorite Ice Cream combination. Who would have thought, match ice cream (which was vegan btw) topped with an old school favorite would be sooooooo yummy, but it was.

5 stars!
