Fall is proof, change is beautiful

You have probably seen the loads of 10 year comparison photos floating around IG and Facebook so I figured I would participate in the challenge.

IMG_3904

A lot has changed in these 10 years. 2009 picture was taken in Las Vegas, a time in my life where free drinks and staying out until 4am was a thing. 2019 picture is a different story, I live in Utah, where life is slow and peaceful and I can be completely content with staying dedicated to my goals. That is 8 hrs of sleep each night, healthy & balanced eating and being strong AF.

Change is good and it can lead to so many opportunities.

Embrace it all. It is beautiful.

Moving into the months of Winter, and next week being Thanksgiving, it means Black Friday is peeking its little face around the corner as well.

That being said, I wanted to share a product I found via Amazon Prime which has changed my life in the hair department and would be an amazing gift for any gal in your family or friend circle. Great for White Elephant Parties too!

Behold the Ionic Hair Dryer by LARMHOI

IMG_3637

This dryer is freaking awesome and is identical to the Dyson one, yet it is only $39.99. Might even get it at a lower price on Cyber Monday, so keep an eye on it!

Picture from Amazon.com

It has 3 heat speeds and two dryer speeds, plus comes with both attachments. It dries my hair in 5 minutes! Not even joking. (I have short, thin hair, so drying time will vary.)

But it is fantastic and a total steal! Take a look for yourself!

Okay, it is time to bring you what you really came here for. Food.

  2. In a large mixing bowl, add Kodiak Cake Mix, Apple Sauce, Coconut Sugar, egg, and sugar. Once a batter consistency, mix in chocolate chips.

Bake @ 375° for 18-22 minutes (checking at 18 mins with a toothpick if they are of consistency.) Your toothpick should come out dry.

I am alive and well!

I know what you are thinking… no I didn’t run away to another country well I did but I’m back and no I didn’t fall off the face of the earth. I have just been living.

To be honest– so much life changing things have happened since we chatted in July!

First, I finally went out of the US, first stop Croatia and then Rome.

This video helps sum it up: https://youtu.be/wAEG21c64aI

The experience was like no other. Most people I chat with about it, have never even thought to visit Croatia. I challenge you to rethink any vacation you have planned and switch it to this beautiful place.

The food, the people and the scenery was unlike any other I have witnessed.

The trip was an eye opening experience. I made some amazing friends whom I island hopped and biked with all week.

I even found a piece of my family history. An Italian restaurant named Filippi’s in Croatia… made me wonder if I am actually Croatian… the manager said the owners are half Italian half Croatian. I guess I better 23 & me for Christmas!

I ended my trip in Rome, and literally left my soul there.

Best believe I ate all the gelato!

The trip was a turning point in my life. It opened up my eyes to what I want, what kind of life I want to lead and where I want to go.

When I got back to the states, I hit the ground running with self care. I rid myself of negativity and I put out to the universe what I wanted and in turn, it answered.

I celebrated with a trip from Quest Nutrition, and was honored as one of their Top 10 Squad Members!

One of my Besties even flew out to celebrate with me!

And life began!

I spent the last few months traveling around the country.

Chicago, West Virginia, Florida, Atlanta, DC, you name it I was there.

My favorite experience this fall was being in Atlanta. We know how much I’m obsessed with yummy food. I literally had chicken and waffles every meal.

Our favorite spot was the Atlanta Breakfast Club. A must if you’re in downtown.

I had the chicken and waffles obvi– and they were out of this world.

Clearly 🤣 and yes… I ate them all.

My friend got their breakfast tacos that were French toast dipped! Literally have been craving them since we left.

So… I finally made a copy cat version of my own! I modified a lot so that I could keep them within my macros but seriously… they were bomb.com

Ingredients:

92g egg whites

2 slices of Hormel Black Label Bacon

75g of Xtream Wellness high fiber wraps

1 egg & 1TBSP CINNAMON

Olive oil spray

2TBSP Walden Farms Syrup

Directions:

1. Cook egg whites in pan set aside

2. I cook my bacon in the micro, 1:15sec on high for 2 slices. Set aside

3. Mix egg and cinnamon to make egg wash, dip tortillas so they are completely coated with the mixture. Fry on a flat pan sprayed with olive oil

4. Construct your tacos, drizzle warm syrup and boom! Enjoy!

They are literally heaven.

Plus my version doesn’t break your cut!

I’m excited to continue to share amazing recipes, meal prep ideas, holiday gift guides and everything in betwix!

It’s amazing to get back to writing again and connecting with you all.
